Although the 60/40 solder melts at a temperature of about 200°C, the tip temperature of the soldering iron is about 370°C. This is necessary to quickly form good joints without the risk of overheating and melting. Of course, one should not leave the tip of the soldering iron tip at such a high temperature for too long.
